Crustless Mini Quiches

Crustless Mini Quiches

Ingredients

  • 1 can evaporated milk
  • 2 tbs flour
  • 2 cups frozen chopped broccoli (thawed and drained)
  • 1/2 c chopped red bell pepper
  • 3 eggs
  • 1/2 tsp salt
  • 2 tsp chives
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 2 c shredded cheddar cheese

Instructions

  1. In a bowl, combine the milk, flour, seasonings, salt and eggs. Whisk to combine. Add the remaining ingredients and pour (to the rim) into a muffin tin that has been sprayed with nonstick cooking spray. Bake at 350 for 20-25 minutes.
